Zero Proof Mixology — Serious Drinks, No Proof Required
What immediately distinguishes the Zorba beverage program is its approach for guests whether or not they are drinking alcohol. Its Zero Proof Mixology program isn't an afterthought composed of garnished sparkling waters and a juice. It's a full parallel program and it's as thoughtfully considered as anything on the spirits side.

The mocktail menu offers spirit-free takes on the Aperol Spritz (Senza Spirito Fritz), Margarita (Free 'Margie'), Old Fashioned (Temperance Fashioned) and French 75 (French Zero Zero), all built with Ritual Zero Proof spirits. But Zorba goes further with its Liquid Gastronomy section, featuring the Muri sparkling collection — fermented, non-alcoholic beverages using techniques drawn from culinary creativity rather than simply removing alcohol from wine. The Muri 'Fade to Black' is a sparkling red built from fermented currants, chamomile kefir, fig leaf and pine needle kvass. The 'Passing Clouds' sparkling white offers fermented gooseberries, quince, jasmine tea and woodruff. These are serious drinks that happen to contain no alcohol.
The zero-proof program also reflects the broader wellness philosophy that defines the Hotel Arista experience. Adaptogenic drinks from Three Spirit — herbal, restorative and plant-powered — sit alongside house botanical sodas featuring ingredients like Egyptian hibiscus, butterfly pea flower and passion fruit. These aren't substitutes for something else; they're drinks worth ordering on their own terms, conceived with as much intent as anything else on the menu.
The Cocktail List
Eight signature cocktails—each with a personality as much as a recipe—are featured on Zorba’s menu. From the light and refreshing Melon Veil to the bold and silky Espresso Martini and the crisp and iconic Vesper 007, the recipes add a distinctive flair to the cocktail experience.
For Old Fashioned devotees, bourbon selection runs from Jim Beam through Baker's Single Barrel 7yr and Elijah Craig Barrel Proof 11yr, each with its own flavor profile noted on the menu. Rye options include WhistlePig and Sazerac. Built around your choice, the cocktail layers warmth, citrus, spice and subtle sweetness into something familiar yet exceptional.
